Oh the magic of Christmas morning! The one morning we have been looking forward to all year. Love is emanating, presents are being opened, families are together, and it’s an all around wonderful time… so the last thing anyone wants to do during this magical morning is take the time to cook an elaborate breakfast. We know we would prefer to spend as much time soaking up the love as possible instead of cooking, so we’ve rounded up 2 easy breakfasts that you can make ahead for minimal effort Christmas morning.

French Toast Casserole

This twist on a classic breakfast is perfect for the family that has a sweet tooth, and all it requires in the morning is preheating the oven and popping it in for 45-50 minutes! 

Ingredients

  • For the casserole:
  • 1 lb loaf french bread, cut into 1 inch cubes (about 10 cups)
  • 8 eggs
  • 3 cups milk
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For the topping:

  • 2 tablespoons unsalted butter, cut into small cubes
  • 3 tablespoons granulated sugar
  • 2 teaspoons cinnamon
  • To serve: maple syrup

Instructions

  1. Place the bread in a greased 13×9 inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, 1 tablespoon granulated sugar, salt, and vanilla extract. Pour the mixture over the bread cubes.
  3. Press the bread cubes lightly with your hands so that they soak up the vanilla custard.
  4. Cover and refrigerate overnight (or for at least two hours).
  5. When you’re ready to bake the casserole, preheat the oven to 350°F.
  6. Uncover and dot the casserole with the butter cubes, then sprinkle with cinnamon sugar.
  7. Bake for 45–50 minutes, or until the top is golden brown and the custard is set.
  8. Let stand for 5 minutes, then cut into slices and serve with maple syrup.

Hashbrown Casserole

If you prefer a savory breakfast over a sweet one, then we suggest this yummy hashbrown breakfast casserole. Filled with potatoes, cheese, eggs, veggies, and more, this flavorful breakfast casserole will quickly become a household favorite. 

Ingredients:

  • 20 ounces shredded hash browns thawed
  • 1 pound sausage cooked, crumbled and drained
  • ¼ cup onion finely diced
  • ½ red bell pepper diced
  • ½ green bell pepper diced
  • 8 eggs
  • 1 can evaporated milk 12 ounces, or 1 ⅓ cups milk
  • ½ teaspoon Italian seasoning or your favorite herbs/spices (optional)
  • salt & pepper to taste
  • 2 cups cheddar cheese

Instructions:

  1. Brown sausage and drain fat.
  2. Combine eggs, evaporated milk, salt & pepper, and Italian seasoning in a bowl. Whisk until smooth.
  3. Set aside ½ cup cheese for the topping.
  4. Place remaining ingredients in a 9×13 baking pan. Pour egg mixture over the mixture and top with remaining cheese.
  5. Cover and refrigerate overnight.
  6. Preheat oven to 350°F.
  7. Remove casserole from the fridge and preheat oven to 350°F.
  8. Bake 55-65 minutes or until cooked through.
